As we step into spring, this month’s April Monthly Meal Box is all about simple, satisfying meals that feel a little lighter—but still comforting. With a mix of quick skillet recipes, slow-cooked favorites, and a fun homemade treat, this box is designed to keep your meals easy and full of flavor as schedules start to pick up again.

Below are some delicious ways to enjoy each cut this month.
Burger Bowls with Special Sauce
Use: Ground Beef
A fresh, fun twist on a classic burger—perfect for busy weeknights or quick lunches.
How to Make:
Brown your ground beef in a skillet with salt, pepper, and a little garlic powder. Build your bowl with:
- chopped lettuce
- tomatoes
- pickles
- shredded cheese
- cooked ground beef
- steamed or roasted potatoes
The Sauce:
Mix together:
- 1/4 cup mayo
- 1 tbsp ketchup
- 1 tsp yellow mustard
- 1 tbsp pickle juice
- 1 tbsp chopped pickles
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp paprika
Drizzle over your bowl and enjoy all the burger flavor—without the bun.
Enchilada Casserole
Use: Primal or Ground Beef
This is one of those meals that’s easy to throw together and always a hit.
How to Make:
Brown your primal or ground beef. Season with garlic powder, salt, and a can or jar of enchilada sauce (or make homemade sauce if you're feeling ambitious). Cover the bottom of a cake pan with your favorite tortillas (we use organic sprouted corn tortillas, but any will do the trick). Cover tortillas with meat sauce and cheese and repeat until your dish is almost full, ending with a layer of tortillas and sauce on top with a hefty layering of cheese. Bake at 375°F until bubbly, which is usually about 20-25 minutes.
Top with: sour cream, avocado, tomatoes, lettuce, cilantro, etc.

Tip: Double this recipe and freeze one pan for later. You'll be so glad you did!
Smothered Steak

Use: Cutlets
How to Make:
Pat cutlets with a paper towel until mostly dry. Dip steaks in flour seasoned with salt and pepper, shaking off the excess flour. Heat a cast iron pan or skillet and add beef tallow or oil. When oil is hot, add steaks to pan and cook until flour is golden brown. Flip and cook on the other side and continue cooking to your desired doneness. Transfer steaks to plate or cutting board to rest.
In the same pan, add tallow and scrape the flour from the bottom of the pan. Sauté onions and mushrooms until soft. Slowly add a little more flour to absorb the oil, then add beef broth and stir to create a gravy. Once a gravy has formed, reduce heat and return the steaks to the pan and simmer with the lid on until tender and the sauce thickens, about 3 minutes.
Serve over mashed potatoes or rice cooked in broth.

Fresh Milled Beef Tallow Fried Donuts

Use: Beef Tallow
A fun spring baking project—and a great way to use your tallow! Tallow gives donuts a rich flavor and perfect crisp texture—without the guilt of eating donuts! With these ingredients, these are actually incredibly healthy and serve your body well. Enjoy these, with no regrets!
How to Make:
Using a bread machine, make a basic bread dough on the "dough" setting just long enough so that the ingredients are mixed and kneaded. Flatten dough out on a mat or oiled surface using your hands or a rolling pin, making dough about 1/2" thick. Using a biscuit cutter or glass jar, cut circles in the dough to form your donuts. Use the end of a wooden spoon or a smaller biscuit cutter to cut out the middle portion. Collect all remaining dough to roll out again and repeat. Allow them to sit and rise.
Meanwhile, heat your beef tallow in a pan. You'll want to use a pan small enough to create a deep enough amount of oil so that the donuts will not touch the bottom when cooking.
Once tallow is hot and dough has risen, carefully place donuts in tallow and cook for 1-2 minutes on each side. Use tongs or a slotted spoon to remove from tallow and place on a rack or paper towels to drain.
Top with your favorite icing or glaze, or simply add to a bag or container with powdered sugar or coconut sugar and shake. ENJOY!
Basic Dough Recipe:
- 3 cups grains, usually hard red (yields 4 1/2 cups flour)
- 1 1/2 cups warm water
- 1/4 cup honey
- 1/3 cup olive oil
- 2 TBS sunflower lecithin
- 1 TBS yeast
- 1 tsp salt
- 2 scoops collagen for added protein (optional but worth it)
French Dip Sandwiches

Use: Beef Roast
This is the kind of meal that feels gourmet but is incredibly easy—perfect for busy spring evenings or entertaining guests.
Using your roast, this Instant Pot method creates tender, flavorful beef in a fraction of the time.
How to Make:
Season and sear your roast on the "saute" setting, then cook the roast on "manual" with beef broth, onions, garlic, Worcestershire sauce, and seasonings for 100 minutes. Once done, shred the beef and return it to the rich, savory juices.
Pile the beef onto toasted rolls, add provolone or mozzarella cheese, and serve with the strained au jus for dipping.

Simple Cast-Iron Ribeye

Use: Ribeye
Sometimes simple is best—especially with a cut like this.
How to Cook:
- Bring steaks to room temperature and pat dry
- Season generously with salt and pepper
- Heat a cast iron skillet until very hot
- Sear 3–4 minutes per side or desired cooking temp
- Add butter, garlic, and herbs—spoon over the steaks as they finish
Let rest for 5–10 minutes before slicing.
Serve With:
- roasted potatoes
- a fresh spring salad
- sautéed asparagus
