This month’s Monthly Meal Box was carefully created with comfort, convenience, and holiday hosting in mind. Whether you’re feeding visiting family, cooking cozy weeknight dinners, or bringing a dish to a gathering, these cuts make it simple to serve nourishing, delicious meals all season long.

Carne Guisada 

Use: Stew Meat

Warm, rich, and deeply comforting — Carne Guisada is a perfect December meal.
Tender beef simmered with onions, peppers, tomatoes, and spices creates a velvety, spoon-tender stew that pairs beautifully with rice, tortillas, or your favorite chip.

Freshly Milled Breakfast Biscuits

Use: Beef Breakfast Sausage

A warm, handheld breakfast perfect for busy December mornings, protein rich snacks, or to take to a holiday party.

Ingredients

  • 1 lb Beef Breakfast Sausage
  • 4 cups freshly milled soft white wheat flour
  • 1 TBS baking powder
  • 1 tsp salt
  • 2 TBS coconut sugar (or regular sugar)
  • 1/2 cup cold butter
  • 2 scoops unflavored collagen powder
  • 1.5 cups cold buttermilk 
  • Optional Shredded raw cheese, chopped green chilies, jalapeños

Directions

  1. Sauté beef breakfast sausage until cooked. Break into small pieces while cooking.
  2. In a food processor or mixer, combine all dry ingredients.
  3. Add cold butter and chop/mix until butter pieces are coated in flour mixture.
  4. Add buttermilk and maple syrup and mix just until dough forms.
  5. Add sausage, cheese, chilies, or any other additives.
  6. Scoop large spoonfuls of the mixture on a baking sheet.
  7. Bake at 425* for 10-12 minutes.

German Sausage Sheet Pan Dinner

Use: German Sausage

Minimal prep. Zero fuss.
Just slice your German sausage, add any of the following vegetables, drizzle with olive oil and salt, and roast at 425* for 25 minutes.

  • Potatoes

  • Onions

  • Carrots or Brussels sprouts

This becomes a hearty, complete meal in under 30 minutes.

Jessica's Holiday Dip

Use: Ground Beef

Every gathering needs that warm, irresistible dip. Let's make it protein packed, healthy, and delicious, shall we? Double this recipe if you're feeding a crowd.

Brown your ground beef and combine it with:

  • 1 Can Tomatoes and Green Chilies 
  • 1 Block of Cream Cheese
  • Shredded Cheese (your favorite)
  • Optional: diced jalapeños, corn, or black beans

Serve with seed oil free tortilla chips or veggie sticks and you're guaranteed to please the crowd. 

Brisket Burgers

Use: Brisket Patties

These new brisket patties are incredibly rich and juicy and they're huge— making the perfect elevated burger.

Top with:

  • Caramelized onions
  • Melted cheddar or gouda
  • A BBQ mayo
  • Toasted brioche buns

***NOTE: These are also easy to break apart and sauté to use on top of baked potatoes or nachos. 

NY Strips for a Crowd

Use: NY Strip Steaks

If you’re hosting or need a centerpiece meal, NY strips are ideal.
Sear or grill them, then slice thinly to serve family-style — it feeds more people while still feeling special.

Top with this Parsley Sauce:

  • 1 cup fresh parsley leaves
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red onion, chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons water
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt

Process all ingredients in food processor until finely chopped and well combined, about 20 seconds; set aside for serving.

Serve with:

  • Crispy potatoes
  • Roasted green beans
  • A simple chimichurri

Chili

A December essential.
Saute onions and garlic, brown ground beef, add tomato sauce, chili powder, salt, garlic powder, and a dash of coconut or brown sugar. Top with shredded cheese, sour cream, green onions, or cornbread croutons.

Perfect for:

  • Snow days
  • Busy weeknights
  • Feeding a crowd inexpensively

Classic Beef Stew in the Instant Pot

Use: Stew Meat

Slow cooked. Tender. Hearty. Warm. Delicious. What more could you ask for?

Ingredients:

  • 2 TBS beef tallow or olive oil
  • 2 pounds CVP stew meat (thawed)
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 4 carrots (coined)
  • 4 sticks celery (chopped)
  • 2 large potatoes (cubed)
  • 4 TBS Worcestershire sauce
  • 4 TBS ketchup
  • 4 cups CVP beef bone broth
  • Sea salt

Preparation: 

  1. Add the following to the instant pot and sauté: beef tallow, stew meat, onion, and garlic. 3-5 minutes.

  2. Add remaining ingredients to the instant pot, stir well.

  3. Put on lid and set to “manual” for 15 minutes.
