MEAL IDEAS

Beef Stew

Use: Stew Meat
A fall staple, our Beef Stew Recipe brings together tender chunks of stew meat, carrots, potatoes, and onions in a savory broth. Slow-cooked until the beef melts in your mouth, this is the kind of meal that makes your house smell like home. 

  • 1 lb stew meat (from your box)
  • 3 tbsp cooking oil or tallow
  • 1 large onion, diced
  • 3 carrots, chopped
  • 2 potatoes, cubed
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1 bay leaves
  • Salt & pepper to taste

Heat oil or tallow in a pot. Add onion, carrot, and garlic to the pot and sauté until fragrant. Add beef and brown stew meat on all sides. Stir in tomato paste, then add broth, Worcestershire, and herbs. Bring to a boil, reduce heat, and simmer covered for 1.5–2 hours. Add potatoes during the last 30 minutes. Cook until beef is fork-tender and vegetables are soft.

**For a quicker version, sauté vegetables and brown beef in the Instant Pot, add remaining ingredients, and cook on "manual" for 15 minutes. 

Cheeseburger Soup

Use: Ground Beef
Our Cheeseburger Soup recipe is creamy, cheesy, and loaded with flavor—everything you love about a burger in a cozy bowl. Perfect for weeknights or Sunday supper, It’s kid-friendly and a guaranteed crowd-pleaser.

  • 1 lb ground beef
  • 3 tbsp tallow or butter
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 3 cups beef broth
  • Heavy cream
  • Diced dill pickles or dill relish
  • Mustard
  • Ketchup
  • Shredded cheese
  • Salt, pepper, and garlic powder

Sauté onion, carrots, celery, and garlic in tallow or butter. Once fragrant, add ground beef and cook until browned. Add in diced potatoes and broth. Simmer until potatoes are tender (about 15 minutes). Season with salt, pepper, and garlic powder. Serve in individual bowls and add cream, pickles, ketchup, mustard, and cheese. This goes very well with garlic bread, hot rolls, or cornbread.

Picadillo

Use: Ground Beef
This one-pan wonder is simple but bursting with flavor and only gets better as leftovers. Simply brown ground beef with onions, garlic, and bell peppers. Add diced potatoes, 1 can of tomato sauce, and enough broth to cover potatoes. Put the lid on and simmer until potatoes are soft. Season with cumin, oregano, garlic powder, and salt. Serve with rice or tortillas. 

Easy Lunch Ideas with Summer Sausage

Use: Summer Sausage

  • Snack Plates: Slice with cheese, crackers, and apples for a no-fuss lunch.
  • Lunch Box: My kids love sliced summer sausage and cheese, something crunchy like siete potato chips, and something sweet/tangy like cherry tomatoes, oranges, or berries for a quick lunch on the go!
  • Summer Sausage Wraps: Roll slices with cheese and veggies in a tortilla for grab-and-go ease.
  • Autumn Grazing Board: Pair with pickles, nuts, and seasonal fruit for a hearty weekend lunch or light dinner.

Shepard's Pie

Use: Ground Beef
