MEAL IDEAS
In this month's box you get a jar of our beloved cooking tallow. If you haven't used it before, you might be unsure about cooking with tallow. Rest assured, beef tallow is super versatile and one of the healthiest fats we could consume. Our cooking tallow has been rendered (cooked down and strained) so you have a very clean cooking fat that can be used safely at high heat unlike olive oil. You can use it in place of any of your cooking oils or butter for sautéing, frying, reheating, and more. Try it out and let us know how you enjoy using it in your kitchen!
Beef Stroganoff

Use: Ground Beef or Beef Cutlets
This dish is a cold-weather favorite and perfect for a busy weeknight! Brown your ground beef (or cube the cutlets for a heartier version), then simmer with onions, garlic, mushrooms (optional), noodles, and beef broth. Stir in sour cream or Greek yogurt for a velvety sauce and enjoy!

Instant Pot Mississippi Roast

Use: Beef Roast
This is the definition of "set-it-and-forget-it" comfort food. Just follow our go-to roast recipe instructions and add ranch seasoning, bone broth, and a few pepperoncini peppers. Let the Instant Pot work it's magic until the beef is fork-tender. Shred and serve on sandwiches, over mashed potatoes, or with roasted veggies.
- Here is our favorite homemade ranch seasoning mix:
- 2 TBS dried parsley flakes
- 1 TBS salt
- 2 1/2 tsp garlic powder
- 1 tsp dried dill
- 1 tsp black pepper
Shortcut: Freeze leftovers in small portions for quick weeknight meals later.
Air Fryer Beef Burritos

Use: Ground Beef
Brown ground beef, add onions and bell peppers if you're feeling fancy, add taco seasoning, and a block of cream cheese. Stir until it's all well combined. Fill tortillas with beef mixture and anything else you'd like (cheese, beans, rice, etc.) and fold both ends closed. Fry in the air fryer at 350* for 6-8 minutes, or until tortillas are slightly crunchy. Our favorite way to make these is with very thin, raw tortillas. We either make them or use Organic Rise N Puff tortillas.
Help Yourself: Roll extras and freeze or refrigerate them (without cooking) so that you have a quick and easy dinner, school lunch, or hearty snack. Our kids love these things!
Fall Skirt Steak Fajita Bowls

Use: Skirt Steak
Marinate your skirt steak with lime juice, garlic, and chili powder, then sear it hot and fast. on a skillet or griddle. Slice against the grain and serve over rice or roasted sweet potatoes with sautéed peppers and onions.
Fall Twist: Add roasted squash or corn for seasonal flair.
Summer Sausage Flatbread

Use: Summer Sausage
Slice summer sausage very thin and add to your favorite pizza crust or flatbread with tomato sauce, mozzarella, and caramelized onions. Bake until bubbly. This is a quick weeknight win and also makes a great after-school snack or lunch.
Cozy Fall Chili
Use: Ground Beef
Start your chili by browning ground beef in a spoonful of cooking tallow for a rich depth of flavor. Add onions, beans, tomatoes, and warming spices like cumin and smoked paprika. Simmer until thick and hearty - perfect for crisp evenings.
Country Fried Beef Cutlets
Use: Beef Cutlets
Pat cutlets dry, dip in beaten eggs, then into breading mixture (we use fresh milled flour, garlic powder, salt, paprika, and onion powder). Using tallow, pan-fry until crispy on both sides. Use leftover flour and tallow to make a delicious cream gravy (extra tasty if you're using raw milk). Pair with mashed potatoes and green beans for a Sunday supper that feels like home.
