September is here, and we're ready for cooler mornings, football Saturdays, and cozy dinners around the table. As we transition into fall, this month's Monthly Meal Box is filled with hearty cuts that are perfect for slow cooking, one-pan meals, and comforting family favorites.

From German sausage skillet dinners to fall-inspired soups, tender short ribs, and a classic Sunday roast, there's plenty to keep your kitchen busy this month!

What's Inside This Month's Box

    • 1 Beef German Sausage
    • 1 Beef Breakfast Sausage
    • 1 lb Ground Beef (+ 2 free if subscribed!)
    • 1 lb Stew Meat
    • 2 Packs Short Ribs
    • 1 Beef Stick
    • 1 Beef Roast
    • 1 Jar Beef Tallow

German Sausage & Potato Skillet

This is one of those easy dinners that's perfect for a busy fall evening. Slice your German sausage and brown it in a skillet with potatoes, onions, and bell peppers.

Season with salt, pepper, garlic, and a little paprika. Let everything get golden and crispy, then finish with fresh parsley.

Make it a full meal: Add sauerkraut or roasted green beans on the side.

You can also revisit our German Sausage Sheet Pan Dinner from a previous Monthly Meals post for another easy option.

Breakfast Sausage & Apple Breakfast Hash

Fall is the perfect time for a hearty breakfast hash—and adding apples gives it a delicious seasonal twist.

Brown your breakfast sausage, then add diced potatoes, onion, and chopped apple. Cook until the potatoes are golden and tender. Top with fried or scrambled eggs.

It's a great weekend breakfast and an easy way to use leftovers for breakfast throughout the week.

Cozy Ground Beef Chili

Nothing says fall quite like a big pot of chili.

Brown your ground beef with onion and garlic, then add tomatoes, beans, chili powder, cumin, and your favorite seasonings. Let it simmer for 20–30 minutes so all the flavors come together.

Top with shredded cheddar, sour cream, avocado, green onions, or cilantro.

Meal prep tip: Make a double batch and freeze half for an easy dinner later in the season.

Cheeseburger Soup

Our Cheeseburger Soup is another perfect recipe for those first chilly fall evenings.

Brown your ground beef, then simmer with potatoes, carrots, onion, and broth until tender. Finish with cheese and a splash of cream or milk for a rich, creamy soup.

Serve with crusty sourdough or a simple side salad.

This is a great one to make ahead—the leftovers are even better the next day!

Beef Stroganoff

Pull out one of our favorite cold-weather recipes from a previous Monthly Meals post: Beef Stroganoff.

Brown your beef (use stew meat or ground beef) with onions and garlic, add mushrooms if you'd like, then simmer with beef broth before finishing with sour cream or Greek yogurt. Serve over egg noodles, rice, or mashed potatoes.

It's cozy comfort food that comes together easily on a weeknight.

Classic Sunday Roast with Root Vegetables

There's something special about a roast slowly cooking on a Sunday afternoon.

Season your roast with salt, pepper, garlic, and herbs. Sear it before adding beef broth, onions, carrots, and potatoes. Cook low and slow until the beef is tender and the vegetables are soft.

Don't forget the gravy! Use the flavorful cooking liquid to make a simple homemade gravy to spoon over the roast and mashed potatoes.

Leftover roast also makes incredible sandwiches, tacos, or breakfast hash.

Instant Pot Beef Short Ribs

Perfect for a cool fall weekend, these beef short ribs are cooked in the Instant Pot until they're incredibly tender and falling off the bone. Season with salt, pepper, garlic, and herbs, then braise with onions, carrots, and beef broth until rich and flavorful. Serve over creamy mashed potatoes or alongside roasted root vegetables for the ultimate cozy fall dinner. Here's our go-to recipe, from Tastes Better From Scratch.

Cooking with Beef Tallow

Fall is also a great time to bring beef tallow back into your kitchen.

Use it for:

  • Roasting potatoes and root vegetables
  • Frying eggs
  • Sautéing vegetables
  • Cooking burgers
  • Crispy roasted Brussels sprouts
  • Frying homemade french fries

Tallow adds rich flavor and works especially well with all of those cozy fall vegetables hitting the kitchen this time of year.
