With four packages of ground beef in this month's box, you'll have plenty of options for easy family dinners.
A few of our favorite fall-friendly ideas:
Shepards Pie Soup
One of our favorite cozy recipes for a chilly evening. It's creamy, hearty, and packed with ground beef, potatoes, peas, corn, carrots, and cheese. Pro tip: omit the potatoes and add cheese tortellini, recipe here.
Chili
You can't go wrong with a big pot of beef chili once the temperatures start dropping. Add beans, tomatoes, peppers, and your favorite chili toppings. Make a double batch and freeze the leftovers for an even easier dinner later.
Stuffed Pepper Casserole
All the flavors of stuffed peppers without all the work. Ground beef, rice, peppers, tomatoes, and cheese come together for an easy one-dish meal, recipe here.

Beef Roast

October is prime roast season. Take advantage of your beef roast by cooking it low and slow with onions, carrots, potatoes, garlic, herbs, and beef broth.
Let everything cook together until the beef is tender enough to fall apart and the vegetables are perfectly soft. Serve it with mashed potatoes or crusty sourdough and don't forget to save the leftovers!
Leftover roast ideas:
- French dip sandwiches
- Beef tacos
- Breakfast hash
- Beef sandwiches
- Loaded baked potatoes
If you enjoyed our Instant Pot French Dip Sandwiches from a previous box, a leftover roast is the perfect excuse to make them again!
German Sausage Wraps
These German sausage wraps are a great option when you want something quick and easy but still hearty enough for a fall dinner.
Simply cook your German sausage and slice it into bite-sized pieces. Place it in a tortilla with your favorite toppings and wrap it up.
Try adding:
- Shredded cheese
- Sauerkraut
- Sautéed onions
- Peppers
- Mustard
- Pickles
For a crispier version, fold the tortilla around the sausage and toppings and toast it in a skillet until golden brown and the cheese is melted.
These are also great for an easy lunch or a simple dinner on a busy night.
Cozy Fall Soups

October is when we start reaching for the soup pot more often, and this month's ground beef and roast are perfect for making hearty soups and stews.
A few ideas to add to your fall menu:
Beef & Vegetable Soup
Use ground beef or leftover roast with carrots, potatoes, celery, onions, tomatoes, and broth.
Classic Beef Stew

Soups are also one of our favorite ways to stretch a pound or two of beef into several family meals—and they usually taste even better the next day!
Beef Jerky ~ The Perfect Fall Snack

This month's box also includes two packages of beef jerky, which makes snack time easy.
Toss a package in the car for fall adventures, keep some on hand for busy afternoons, or pair it with cheese, fruit, and crackers for an easy snack plate.
